產(chǎn)品介紹

菠蘿蛋白酶是從鳳梨屬植物-菠蘿中經(jīng)生物工程技術(shù)提取精制而成的一組巰基水解蛋白酶。菠蘿蛋白酶主要來源于植物莖中,故也稱為莖菠蘿蛋白酶。菠蘿蛋白酶的主要成分是一種含巰基的蛋白酶,同時還包含過氧化物酶、酸性磷酸酯酶、幾種蛋白抑制劑和有機活性鈣,其活性中心為巰基(—SH),能進行各種蛋白質(zhì)水解,進行生化反應(yīng),可廣泛應(yīng)用于食品、醫(yī)藥及生物等行業(yè)。

等電點:9.55 。

最適合作用溫度:50~60℃。

失活溫度:65℃。

適宜PH:5.0-8.0。

失活PH:低于 3.0 和高于 9.5。

性狀:淺黃色粉末,有輕微的菠蘿特殊氣味。

酶活定義:紫外光分光度法:在測定條件(37±0.2℃;PH值7.0)每分鐘水解酪蛋白釋出的三氯乙酸可溶物在275nm波長有吸光度與1微克酪氨酸的吸光度相當(dāng)時,所需的酶量即為一個活力單位,用u/g表示。
